I LOVE peanut butter! A few of my friends may classify it as an obsession but whoever decided to grind some peanuts enough to make them smooth was a genius! I love peanut butter because it is super salty, a little sweet and a great texture for bananas, apples, oatmeals and of course cookies!

There’s a history behind peanut butter cookies always having a criss cross mark on them from a fork. I don’t know the reason why but I speculate it was one’s way of labelling this cookie apart from the others, perhaps for allergy reasons?

This recipe has a smaller number of ingredients, is kid friendly (depending on allergies) getting them involved in rolling the cookie dough balls and covers the want for a soft and crunchy cookie!

Peanut Butter Cookies

1/2 cup margarine or butter
1/2 cup peanut butter (smooth is better)
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 tsp vanilla
1/2 tsp baking powder
1/2 tsp baking soda
1 1/4 cup flour
sugar for decorating

1. Cream butter and peanut butter.
2. Add 1/2 cup flour, sugars, egg, baking soda, baking powder and vanilla. Beat.
3. Add remaining flour and stir.
4. Using your 1/2 inch ice cream scoop (or spoon), roll dough approx. 1/2 inch wide into a ball. Roll in white sugar, place on tray.
5. Press all cookies horizontally than vertically with a fork – flatten.
6. Bake @ 375F for 7 to 9 minutes.
